Are you taking the Green Smoothie Challenge? I find that the first couple of weeks are easy peasy, but around now you might be running out of green smoothie steam. It takes a while to form a habit, and part of the process is getting over any mid-challenge slumps you might be experiencing.
What I feel is really important at this point in the challenge – or whenever you start to hit a wall with your daily smoothies – is to not beat yourself up. Did you miss a day? Don’t worry about it!
Instead of focusing on mistakes, just do your best and reward yourself for what you have done so far! It’s not called a challenge for nothin’!
If you started on the first day of Lent, then you’re already on day 17, so give yourself a high five for all of the green smoothies you’d made. Don’t sweat those busy days when you rushed out of the house without turning on the blender!
This week’s recipe features one of my current obsessions: soy yogurt. I’ve been eating this stuff like it’s my job lately, so it felt natural to add some to my smoothies! Yay for healthy probiotics!
Raspberry Dreamsicle Green Smoothie
- 1 cup soy or almond milk
- 1/2 cup soy yogurt
- 1/2 cup frozen raspberries
- 1/2 teaspoon vanilla extract
- 1 leaf collard greens, rib removed. If you’re getting used to the taste of green smoothies, you can add a second leaf of collards.
- 2-3 ice cubes
- Blend everything up until it’s smooth. Collards are a tougher green than lettuce, spinach, and kale, so give this smoothie some extra blending time to really break that collard leaf down!
