The week of drinks continues with my last recipe flashback!
Did you know that when you soak chia seeds they plump up into almost a jelly? This makes them perfect for making a superfood spin on bubble tea. The texture is a little bit different from the tapioca pearls in your typical bubble tea, but the experience is still quite similar.
I made this chia seed and citrus cooler using a mixture of citrus juices, but you can really use any juice that you like. Experiment, and have fun with it!
Chia Seed Citrus Cooler
- 2T chia seeds
- 4c citrus juice (your choice!)
- You can either use a one quart mason jar or two pint-sized jars. If you go with the latter like I did, just divide the chia seeds between the jars. For a quart, just put all of the seeds in one jar.
- Pour in the juice and stir well. Chia seeds love to clump when you get them wet, so stirring is really important. You might also want to give the jars a good shake once you close them and before you drink.
- Chill in the fridge, letting the seeds soak for at least a few hours before you drink.
