One thing that I love about being part of the vegan community is meeting like-minded folks who are fun and kind. Cadry at Cadry’s Kitchen is a perfect example!
I discovered Cadry’s blog during a previous edition of Vegan MoFo, and I’ve been a fan of her awesome recipes and the great stories she tells about each of her dishes ever since. That’s why I was thrilled when she asked me to be an interviewee for her V List project: an interview series with other members of the vegan community.
Like I said, I’m a big fan of Cadry and of her blog, Cadry’s Kitchen. On her site, she shares delicious vegan recipes, food reviews, and interviews with other folks in the vegan community.Â It’s been a lot of fun getting to know some bloggers that I really love – like Ketty from Luminous Vegans – a little bit better through her V List interview series.

Disclosure: I was battling the tail end of a cold while recording the interview, so if I sound a little bit under the weather, it’s because I was. Darrol Henry has got to stop bringing colds home from preschool!
In the interview I talk about Shepherd’s Pie, and you guys – my love affair with that mashed potatoey goodness is no joke. Here are a few of the Shep Pie recipes I’ve written down.
The best part about Shep Pie, though, is that you can use whatever you have on hand to make it, so check the produce drawer, and throw one together! During the cold-weather months, we probably eat a Shep Pie once or twice a week. I love that it’s easy to make and that I can usually make a good one with even a pretty bare pantry to draw from. They’re also handy because you can assemble one in advance, then stick it in the oven an hour before supper time.
