You guys know how I feel about porch weather, and this cilantro mojito recipe demands that you take it out in the sun for sipping!
I’m a long-time fan of mojitos. A traditional mojito calls for plenty of fresh mint, and this was my introduction to the delicious world of booze + herbs. I love how muddling in just a modest amount of fresh herbs elevates a cocktail to the “fancy pants” level without requiring a lot of extra effort or ingredients.
We got a gorgeous bunch of fresh cilantro in our CSA basket last week, and I realized that I’d never made a cocktail with cilantro. Basil? Sure! Lavender? You betcha? But a cilantro cocktail felt like a challenge.
It turned out to be not so challenging after all.
The cilantro mojito recipe below is a little bit different from its traditional cousin. On top of swapping out the mint in favor of cilantro, I’m not using soda water or simple syrup. Instead, you’ll top off your glass with just enough ginger ale to give it a slight kick. More of a nudge, really.
makes 1 drink
- 2 tablespoons fresh cilantro, chopped
- 1 1/2 ounces white rum
- juice of 1/2 a fresh lime
- ginger ale
- In the bottom of a rocks glass, muddle (aka mush together) the cilantro, rum, and lime juice. Fill the glass with ice, then top off with ginger ale. Stir and serve!
