Goodbye, Thanksgiving! Now, it’s time to get creative with those leftovers. Here’s an easy crock pot recipe for using up some of that Tofurkey left in your fridge from yesterday.

  • 4c veggie broth
  • 1c brown rice, uncooked*
  • 1-2c broccoli, in florets
  • 1/2 of an onion, diced
  • 4 carrots, diced
  • 1c leftover tofurkey, diced (maybe try to remove as much stuffing as you can)
  • 1/4 c olive oil
  • 2 cloves minced garlic
  • 1 handful each fresh dill and thyme, chopped
  • Mix everything up in the crock pot and cook on high for 3 hours, or until the rice is tender. Enjoy!

    *If you use white rice, it will take less time to cook…start checking after about 90 minutes.

    This sounds SO yummy! We didn’t use tofurky (just all veggies) but I would like to try it out with seitan… :9
