Green Chai Tea Cookies
These cookies turn out sort of spicy like gingersnaps and are totally delicious! You can find the matcha powder online or at specialty shops. I picked up a huge jar at Trader Joe’s.

  • 3/4c all-purpose flour (You can do up to half of the flour with whole wheat, if you want!)
  • 1/2t cinnamon
  • 1/4t nutmeg
  • 1/2t ground ginger
  • 1/4t salt
  • 2/3c firmly packed brown sugar
  • 1/4c margarine, softened
  • 1/4c matcha powder
  • 1T flax meal beaten with 3 T water

Preheat your oven to 350F, and lightly grease your baking sheets.

Combine the flour, cinnamon, nutmeg, ginger and salt. In a separate bowl, beat the brown sugar and margarine together. Beat in the tea and flaxmeal until everything gets creamy. Gradually stir in the flour mixture, and drop by rounded teaspoon onto baking sheets.

Bake for 9 to 10 minutes or until centers are set and edges are lightly browned. Cool on baking sheets for a couple of minutes before serving.
