More Ricecooker Love
As promised, I’ve been making more rice cooker
meals!

This time, I decided to completely depart from anything a rice cooker is really intended for. You can basically cook any grain you want in there, don’t let the name fool you! I was in the mood for something greasy and spicy and easy. Rice cooker to the rescue!
Quinoa with Spicy Soyrizo and Kale
In the grain portion of the cooker, mix 1c quinoa with just over 2c of water, stirring everything up really well.
Put the steamer basket on top, and toss in:
- 1 package Trader Joe’s Soyrizo (or your favorite faux sausage)
- 1 bunch of kale, chopped into bite sized pieces (or whatever leafy greens you have on hand)
- 1 handful cilantro, chopped
Hit the on switch, and kick back. Maybe have a soothing bath? Or do some laundry. See what the cats are up to, and check your email. Keep an ear out for the little click that means your dinner is almost done!
Combine the quinoa and soyrizo mixture in a large bowl. Stir in 1/4c nutritional yeast and 2T fennel seeds, if that’s your thing. It’s definitely my thing. Serve while it’s still hot! Maybe with some kind of a nice, hoppy beer to go with it
So are there any rice cooker experiments you’d like to see in the future? Grains you’re dying to try? I was thinking Israeli cous cous might be fun next time, but I’m totally up for some suggestions, too!

Mmmm… that sounds so good. I’m stuck in the Atlanta airport with nothing to eat… I asked what the vegetarian options were at the “restaurants” on this concourse and was told they had a lettuce salad and french fries.
Oh no! I don’t know how long your layover is, but there’s a Chilis in one of the concourses that has veggie burgers. Airport food is tough. I think I remember a french fry dinner last time I was travelling. :(
