Seeking Corn Muffin Advice
Dave and I had a corn muffin craving, so the other night I whipped up a batch of a dozen corn muffins using this recipe from VegWeb. I used the extra margarine option (of course!) and also added a can of organic corn, because we both love corn muffins with kernels in them.
The muffins came out pretty well, but they’re a little bit drier than I’d like. All of this is a roundabout way of asking you guys a question:
What’s your favorite vegan corn muffin recipe?
I’m looking for a savory kind of corn muffin, and it would be really rad if the recipe included corn kernels, since I’d probably add them either way. Jalapeno corn muffin recipes are welcome. too!

the skillet corn bread in Veganomicon comes out nice and moist. you have to eat it pretty quickly though because it goes green fast. i’m sure you could make as muffins and just reduce baking time.

Mine involves subbing vegan sour cream for the soy milk in most recipes and thinning it a little with water. I made it that way once when someone had gifted me vegan sour cream (guacamole sour cream) and I didn’t know what to do with it so it just sat around for forever until I got half way through making corn muffins and realized I didn’t have any soy milk. I don’t know why it worked so well, but it did. And always be sure to mix corn flour with corn meal to make it moister, if that’s what you’re going for. I grew up on Jiffy mix. :)
I have to second that PPK’s cornbread recipe is really good and we make it all the time in our house.
