My Favorite Chocolate Chip Cookies

So earlier this week, Leigh asked for folks’ favorite chocolate chip cookie recipes, and I realized that I’d never posted mine! Well, that’s just no good. That’s just no good at all!
I totally agree with Leigh on this one….chocolate chip cookies are excellent comfort food. With the weather being all Fall-like and rainy, it’s total cookie season! So! Here is the recipe for my very favorite cookies: chocolate chip with dried cranberries and cashews. Decadent!
- 1/2 cup oil (or softened margarine)
- 2 teaspoon vanilla
- 1/4 cup water
- 2T soymilk
- 1 cup white flour
- 1 cup whole wheat flour
- 2 tsps baking powder
- 1/2 tsp.salt
- 1t cinnamon
- 1/2 bag dark chocolate chips
- 1/2c cashew pieces
- handful of dried cranberries
- 1 cup sugar
Preheat the oven to 350.
Mix all of the wet ingredients. In a separate bowl, mix the dry.
Make a well in the center of the dry ingredients and add the wet to them, mixing it really well. I suggest using your hands.
Shape the cookies and place onto an ungreased cookie sheets. Bake for 10-12 minutes (depending on the cookie size), and let them cool before gently moving them over to a plate.
Serve! I dare you to have some left over the next day!
