Basil Curried Cous Cous

Vegan MOFO III

Holy crap, guys, this recipe took less than 10 minutes total and was SO GOOD! Ready?

Cous Cous

  • 1c water
  • 2T margarine
  • 1t each: curry powder, garam masala
  • pinch of dried ginger
  • 1c dried whole wheat cous cous
  • handful of fresh basil, minced
  • 2 handfuls of raw cashew pieces
  • 2 minced cloves of garlic

In a saucepan, bring the water, margarine, and dried spices to a boil. Then, turn off the heat and stir in the cous cous. Let this sit for 5 minutes.

Just before serving, mix in the remaining ingredients.

That’s it! I can’t believe how delicious this was. You can serve it on its own, as a side dish, or use it as filling for stuffed winter squash. So many options!
