A Sisterly Salad

Vegan MOFO III

So my little sister, Amanda, is a pretty rockin’ cook. We both ascribe to the philosophy that you should experiment and not be afraid to deviate from a recipe. Last night, she told me about this tasty salad that she made, and I thought it would be just perfect for Vegan MOFO!

Sisterly Salad

The recipe is adapted from this one over at Yum Sugar.

Sisterly Salad

  • seeds of 1 pomegranate
  • 1 peach
  • 1 persimmon
  • some thin sliced red onion
  • 1 bag of spinach (she says that next time she wants to try arugula)

Toss the ingredients in a large bowl, squeeze a lemon over it, and drizzle with olive oil. Fresh black pepper and a little kosher salt for dressing brightens everything up.

Nice work, Amanda! Just looking at that salad is making me hungry!
