My pops came to town over the weekend, and while he was here he whipped up a giganto batch of an old Levine family recipe: split pea and vegetable soup!

This recipe makes a lot of soup. I mean…it makes a LOT of soup! We had some for dinner, gave some away, and stuck some in the freezer for later!

1/4 c olive oil
2 large carrots, sliced
about 4 decent sized stalks of celery, sliced
1 parsnips, chopped

2 medium sized red onions, chopped

1 parsnip, sliced the other into big chunks
1 large rutabaga, chunked

14 c water
7 teaspoons vegetable bouillon, we used Better Than Bouillon

about 2 pounds of split peas (yellow or green is fine)
handful of fresh dill
salt and pepper to taste
1T dried thyme

In a large soup pot, heat the olive oil on medium high then add the carrots, the celery, and parsnip that you chopped. Saute until slightly caramelized and then add your onions.

Just as the onions turn translucent, about 3-5 minutes, add the water and vegetable bouillon. Bring that to a boil, and add the split peas, dill, salt, pepper, and thyme.

Cook that for about an hour, and then add the rutabaga and chunked up parsnip. Simmer that on low heat for about another hour to an hour and a half. If you want a thicker soup, leave the top off while you simmer. If you want it thinner, leave it covered.

Serve! We had this with some nice bread, but it would be great topped with lazy croutons, too!
