Easy Pear and Apple Crisp

The folks at Ritz crackers sent me a box of their new flavor, Brown Sugar Cinnamon, so I could try it out! Who knew that Ritz crackers were vegan? I did not know until a couple of weeks ago, when a kind woman named Laurie emailed me the ingredients list.
I wasn’t feeling either of the recipes printed on the sides of the box, so I did a little googling and found this recipe for Ritz Apple Crisp. This recipe is based on that one.
Vegan Ritz Apple Crisp
1 tube of Brown Sugar Cinnamon Ritz crackers, crushed
1/4c Earth Balance (or vegan margarine of your choice)
3 apples, peeled, cored, and thinly siced
3 pears peeled, cored, and thinly siced
Preheat the oven to 350.
In a large bowl, cream the margarine and then combine with the cracker crumbs. Set this aside.
Arrange the apple and pear slices on the bottom of a baking dish. Cover with the margarine and cracker mixture, and bake for 40 minutes. The topping should get just a little bit brown.
This turned out beautifully! It was the perfect dessert for a chilly evening.
