It sure is winter out there! You can tell by the freezing temperatures and the change to our weekly veggie baskets from Vegetable Husband. Greens are in season, and we’re enjoying at least one, if not many bunches of tasty greens every week!

I happen to love greens, especially the dark leafy kind. After avocado and broccoli, kale may be one of my favorite foods. Whether sauteed with just some olive oil and garlic or in some kind of fancy casserole, kale just rocks my socks.

The cold’s got me a bit sluggish, which means a super-simple recipe. Not too many ingredients. Not too time-consuming.

Kale and Tofu Stir Fry
1T olive oil
1 block extra-firm tofu, cubed to whatever size you like!
2T shoyu or soy sauce
2 tsp (or to taste) chili garlic sauce or your favorite hot sauce
1/4c nutritional yeast

1 bunch kale, chopped (You can substitute pretty much any dark, leafy green.)
2 cloves garlic, minced

Extra nutritional yeast, for topping.

In a large pan, heat the oil on medium-high, then toss in the tofu. While it’s all heating, add the shoyu, hot sauce and nutritional yeast. Stir everything really well, so the tofu gets nicely coated with the saucy stuff.

Next, toss in the kale and garlic. Stir everything up, cooking until the kale turns a lovely bright green. Now, you’re ready to serve! Once you’ve doled out portions, top with sprinkles of extra nutritional yeast, if you like!

Easy peasy, and it’s the sort of hearty dish that warms you up from the inside out!

    That sounds delicious! Kale is such a versatile green and I think many gardeners should seriously consider planting lots of it – what you don’t eat, you can give away to your neighbors!
