Coconut Lime Cupcakes with Molasses Rum Buttercream Frosting

Aka: LOST Cupakes! A bunch of folks have asked for this recipe. It’s not so much a recipe as tweaks on someone else’s recipe, and I’ll lay that out below along with a link to some great cupcake toppers and the awesome cupcake stand in the photo!

Last night’s premiere left me…sort of speechless! I’ve basically got no theories. My friend Denishia did have a good one, though, and now I’m going to put a cut, so folks who haven’t seen s6e1 won’t get spoiled. If you’re looking for the cupcake recipe, scroll past the stars to the bottom.

Now, on to the cupcakes!

Coconut Lime Cupcakes with Molasses Rum Buttercream Frosting
The recipe itself is modified from Vegan Cupcakes Take Over the World, but you could probably find any vanilla cupcake recipe and make this work. Ready? OK!

Cupcakes

  • Get yourself a vanilla cupcake recipe.
  • Substitute coconut milk for the regular or soymilk and lime juice for the vanilla extract.
  • Mix 1T lime zest into the batter at the very end.

Everything else should go according to whatever recipe you’re using. The trick here is to have the same amounts of liquids:solids, just changing up the flavors.

Frosting

  • Find a basic buttercream frosting recipe.
  • Substitute rum for the soymilk.
  • Substitute molasses for the vanilla extract.

    If that’s correct, Jack, Kate, Sayid, Hurley, Sun, and possibly Aaron will have to be killed in one time line this season since they all exist in both time lines! Aaron because Claire was on the flight and pregnant in the second time line. This is going to be some grim watching.

  7. I thought the cupcakes and frosting recipe was OK until I saw the “replace soymilk with rum” That makes them PERFECT.

    I thought this season was going to mesh all of the time lines into one, not fracture them further. I am sooooo confused.

  8. Totally…the 2 timelines are a bit confusing, but I love all the answers we’re getting! So many just in that first ep! That EW article above clears things up a bit about the 2 realities, but ofc it’s LOST, so it still leaves some things up in the air.

  9. i watched lost through season 3 before i quit tv for good. i’m not sure what’s worse, being sucked into the world of tv or missing out on lost. either way, i think all of your dharma food and drink decor is awesome :)
