Bonus Recipe: Lychee Mojitos

I think it’s that LOST skipped a week…I really wanted to go all-out last night with snacks and drinks! After whipping up those Orange Ginger Cupcakes, I remembered that there was a can of lychees in the pantry from that trip to Super H with Charlie and Steph.

My sister and I had made lychee martinis before, but my vodka supply was low and that didn’t feel like so much of an island-themed drink anyway. Then I remembered that we had some rum! YES! It was so on. Here’s the recipe:
- lychees, canned in syrup (save the syrup)
- fresh basil, chopped
- rum of your choice (I made one with white and one with spiced, and I think I preferred the white rum.)
- soda water
To make one mojito, muddle 1oz of the syrup from the lychees with 1T of the basil. Then, fill the glass with ice, add 1 to 1.5oz of rum, and top it off with the soda water and a couple of lychees. Give everything a good stir, and you’re ready to sip!
These were delicious! I’ll definitely make them again.
