I’m in a little bit of a lunch rut these days. I think it might have something to do with all the traveling I did in the past month. Now that I’m home and cooking again, I’m having trouble getting back into the swing! Lunch seems to be the toughest for me, because I need something quick and not too labor-intensive.

In the spirit of reviving my lunchtime cooking skills, here’s some quickie recipe inspiration! Some of these are recipes of mine from the vault and others are from some cooking heroes that I might not have mentioned in my previous post:

  1. Hummus Sandwich – whole grain bread spread with a generous amount of hummus, and topped with arugula, lettuce, or spinach and some thinly sliced onion.
  2. Tempeh Wings and Sauteed Kale
  3. Three Bean Salad
  4. Raw Collard Wrap with Ginger Dressing
  5. Salad! Greens, beans, and diced veggies tossed with bottled dressing or some oil and vinegar from the pantry. Bonus points for adding avocado, nuts, seeds, and dried fruit.
  6. Somen Noodles in Broth
  7. Rice, Bean, and Veggie Burrito
  8. A Tomato Sandwich
  9. Tofu Scramble
  10. Sweet Potato with Curried Greens

    I also like big salads with some dips on the side, like guacomole, hummus, or a cashew/nooch dip. That’s always fun and quick because you can pull it all right out of the fridge pre-made.

    Nice (helpful) list! My favorite sandwich style go-to is an avocado, cheez, hummus & tomato sandwich. So refreshing and filling!

    Oh my, that sounds good! Do you make your own cheez, or do you go store bought? I tend to go back and forth, bc store bought is so pricey!
