easy vegan lunch ideas

Sometimes the best vegan lunch ideas are the simple ones.

Field Roast’s products are on the pricey side, but sometimes I splurge and pick them up. Unlike a lot of vegan meats, Field Roast uses seitan as a base, so their products are soy free. I’m not trying to completely cut soy out of my diet, but as a vegan it’s really easy to eat soy with every single meal. Too much of anything is not good for your body, so when I can replace a soy product with a non-soy one, I like to go for it.

This sandwich was totally worth the extra cash, and it was so simple to make:

  • Sauteed apple smoked Field Roast sausage  in a little bit of olive oil with some diced onion on medium heat. Cook until the sausage and onions are just a little bit brown.
  • Pile it all onto whole wheat bread with sliced avocado and a little Vegenaise for good measure. YUM!
