Peach Salsa with Cucumber and Mint
Peach salsa is so refreshing in the summer, and adding cucumber and mint to the mix ups the cooling power even more!
Do you ever have one of those moments where you’re wanting to whip up a snack and you’d also really like to use some of the things in the fridge that are nearing the end of their days? This happened to me last week, and the results were super delicious!
Peach Salsa with Cucumber and Mint
Ingredients
- 2 very ripe peaches, diced
- 1 c cucumber, diced
- 1/4 c sweet onion, minced
- 2 T mint, minced
- juice of one lime
- 1/4 c rice vinegar
- 1/4 t salt
Directions
- In a medium-sized bowl, toss all of your ingredients.
- Set your salsa in the fridge to chill for at least an hour before serving. Overnight is even better!
I served up my peach salsa with chips for dipping, but I think it would be great over rice and veggies or alongside a spicy tofu dish.

So delicious! I love salsas, though I think when most people think of it they think of the typical tomato salsa eaten with tortilla chips. Such an easy recipe to make – I’m definitely going to share this one. Thanks. ;)
