This tangy, creamy, lemony green smoothie is super refreshing!
If you’ve been playing along with the Green Smoothie Challenge, we are nudging past the halfway point this week – how does it feel?
I usually find that at this point in the program I’ve hit a nice groove. Even when I’m a just-waking-up-zombie, grabbing smoothie ingredients and tossing them in the blender feels natural enough that it doesn’t take too much effort to keep things going.
For other folks, this is a challenging point in the program – it really depends on you and how your brain forms habits!
Whether you’re taking the challenge or not, sometimes just mixing things up can be the push you need to get your green smoothie on, and I hope this recipe helps you guys! Like the mushroom toast recipe that I shared a few weeks ago, this is another recipe that I’d been having dreams about, and I’m so glad I remembered it when I woke up!
This green smoothie is a little bit thinner than what you’re probably used to, especially if you’re following along using 40 Days of Green Smoothies. It’s not as thin as lemonade, but since I really wanted the lemon to shine, there’s not a whole lot else going on. Don’t worry, though, the banana adds plenty of sweetness!
Lemon Cream Green Smoothie
Nutritional Info (based on 1/2 lemon and fortified soy milk) – calories: 160; carbs: 29g; fat: 4g; protein: 8g; potassium: 509g; sugar: 10g; Vitamin A: 36%; Vitamin C: 115%; Calcium: 36%; Iron: 15%
- 1/2 – 3/4 of a lemon, peeled
- 1 banana
- 1 cup soy, almond, or your favorite vegan milk
- 1 small handful fresh parsley
- 3 cubes ice
- Toss everything in the blender, starting with 1/2 of the lemon. Blend until smooth, then give it a taste.
- If it’s nice and tangy, drink up! If it’s not quite sour enough for your taste, add more lemon, one section at a time, blending to incorporate until it tastes just like the lemon cream of your dreams!
