Apple Pie Green Smoothie: Challenge Check-In #5

Confession time: since my baby could get here any time now, I’m working ahead a bit on these check-ins, so hopefully I’ll be able to get them all scheduled for you guys before he comes to say hello!

At the beginning of this month, a sickness flew through our house. I was out of commission for almost a week, and just when I was on the mend, Dave came home from work with a fever and chills. Boo! Since the last thing I wanted was for us to trade sicknesses back and forth, I tried to eat extra super duper healthy, so we could get these germs outta here! I took that “apple a day” thing seriously, y’all.

I’m actually not super crazy about apples on their own. I love a good applesauce, and I like them mixed with other things, but plain old apples strike me as plain old boring. This green smoothie was my attempt to get in some raw apple goodness without having to actually eat a raw apple.

Apple is a little tougher to blend up totally smooth, so unless you have a high speed blender, get ready for a little bit more texture than usual. I blended for a couple of rounds in my very not high speed blender, and it turned out just fine.

Apple Pie Green Smoothie

Nutrition Info (using unsweetened soy milk): 140 calories; 22g carbs; 4g fat; 7g protein; 14g sugar, 131mg sodium


  • 1 small apple, cored and chopped
  • 1 big handful fresh lettuce
  • 1 cup soy, almond, or your favorite vegan milk
  • 3-4 ice cubes
  • pinch of ground cinnamon
  • 1/2 teaspoon fresh ginger, chopped
  • 1/4 teaspoon vanilla extract


  • Toss everything in the blender, and blend until smooth (or as smooth as you can get it!).
