Honestly, I can’t believe I didn’t think of making avocado crackers a long, long time ago – it’s made of my favorite things!
One of the things I’m learning about motherhood is that it’s kind of hard to feed yourself! My baby loves kitchen sounds, so cooking is no problem, but the actual sitting and eating often has to be a one-handed situation, while I balance a sweet babe on my other arm. Finger foods are the key to feeding myself during the day when I’m taking care of Darrol Henry on my own.
You might not think that avocado is healthy, because it’s high in fat, but it’s actually a superfood! The fat in avocado is good-for-you monounsaturated fat. Avocado is packed with vitamin E and micronutrients that are great for your skin, and that healthy fat helps prevent heart disease.
I’m sure you can figure out this recipe for avocado crackers from the photo, but just for posterity, here it is!
