Toasting the end of summer with a minty watermelon gin fizz!
If you’ve been following my site for a while, you might remember way back when I was going through a marathon training program with my running partner. It was the thick of summer, and H-O-T, and I came up with a homemade sports drink recipe using watermelon and coconut water. I’ve been looking for an interesting way to use the Prairie Organic Gin that Prairie Spirits sent me to test out, and suddenly it dawned on me that watermelon would pair beautifully with gin. Especially if you add some mint. And lime. And fizzy water. Sort of a summery gin fizz situation.
This recipe was perfect for using up some of the mint that’s going crazy in my garden, and since you make the watermelon mixture in a big batch, it was just right for serving up when a couple of girlfriends came over. The best part? The rest of the watermelon mixture was super tasty over ice the next day to help fuel my morning run!
You don’t need a juicer to make this gin fizz. Watermelon is such a liquidy fruit that you can just toss it into the blender, and the result is a good, juicy consistency. In fact, I prefer making watermelon juice this way, because you don’t lose any of that healthy fiber. I mean, really, this drink is basically healthy food right? Right?
Watermelon Gin Fizz
This recipe makes a lot more watermelon mixture than you need for one cocktail. You can store the rest in the fridge for 3-4 days and use it to make more cocktails or mix it up with soda water (or just pour over ice) for a refreshing, non-boozy summer drink!
- 2 cups cubed watermelon
- 1/4 cup loosely packed mint leaves
- Juice of 1 lime
- 1 ounce gin
- Soda water
1. Put the watermelon, mint, and lime juice in the blender, and purÃ©e until smooth.
2. Pour the gin into your glass and fill it up the rest of the way with ice. Pour enough watermelon mixture to fill the glass half way, then top off with soda water. Garnish with more lime and mint, if you like.
