This is a story of true love. A tale of two tacos that were meant for each other.
Last night was Dave’s and my seventh anniversary, and instead of cooking we got Thai delivery. It was decadent, and I ate so much that I didn’t have room for ice cream! Anyone who knows me that I need to be pretty darn full to skip dessert on a special occasion.
But today, I’m not writing about how much I love my husband. Today, I am writing about another kind of kismet: the kind that happens when two people spontaneously make almost identical taco-like dishes on the exact same day.
Her recipe is a little bit different, but in spirit, these tacos are soulmates. Mine had a base of black beans; hers used lentils. Hers were topped with Daiya cheese, and I drizzled mine with tahini. But they both were packed with end-of-summer tomato goodness, and I think both would be super yummy with the quickie side salad recipe that she included with her tacos.
Of course, I have a sneaking suspicion that both of us are just jealous of Lazy Smurf’s Taco Cleanse and wish we had the discipline to eat tacos all day, every day, all MoFo long. Whatever the reason, these tacos are meant to be, and you can bet that I’m going to be making myself Lidia’s lentil tacos sometime soon!
