Hey speaking of summer, I have a confession: Dave and I spent last week on St. Simon’s Island with his family. We go to St. Simon’s every year, and this year I worked ahead, so that I could soak up more sun and spend less time meeting freelance deadlines at the island’s best coffee shop. Even the best coffee shop doesn’t beat watching Darrol Henry experience the pure joy of splashing in water.
Working ahead means that I wasn’t able to develop a good Friday Cocktail recipe for this week. Rather than slap something together, I thought it would be fun to look back at some of my favorite summer cocktail recipes. And – surprise! – they’re all made with peaches.
4 Peachy Summer Cocktail Recipes
Not only does this mojito star local peaches, the mint and jalapenos came straight from my garden. If you’re new to gardening, I can’t recommend planting mint and jalapenos enough. They’re two of the few food plants that I manage to keep alive.
This vodka peach cocktail is refreshing and summery. To make this cocktail, you start by making a small batch of lemon-basil vodka. It takes a little bit of planning ahead, but it’s so worth it.
This was the first Friday Cocktail recipe that I shared in this space, and of course it’s a summer cocktail recipe packed with peaches! Pickled fruit might sound weird if you’ve never tried it. But trust me, y’all. Trust me.
Usually I like my margaritas on the rocks, but this hibiscus tea margarita is a delicious exception. Try it with some chips and peach salsa on the side, why not?
