Holy moly, has it been hot out there! Let’s cool off with a lemon-ginger frozen daiquiri, OK?
Like I mentioned last week, my husband’s family and I headed to Saint Simon’s Island for a week of summery fun. My sister-in-law Liz’s afternoon ritual was to sip a frozen daiquiri by the pool with her book, and it made me realize that I have never posted a daiquiri recipe in this space!
Well, consider the situation remedied!
Liz asked me to come up with a lime daiquiri recipe, but you guys know that I can’t leave well enough alone. Instead of limes, this frozen daiquiri features lemon and ginger for a sweet-and-spicy party in your mouth.
My original plan was to juice fresh lemons for this drink, but Whole Foods was having a sale on Honest Lemonade. Honest’s ingredients looked pretty decent to me, so instead of lemons, water, and sugar, I saved you some time using bottled lemonade. Yay!
Of course, if you prefer to go all from-scratch, you can make a pitcher of lemonade before you make your frozen daiquiri.
Lemon-Lime Ginger Frozen Daiquiri
Yield: 1 generous frozen daiquiri or 2 smaller ones
- 1 teaspoon fresh ginger, minced
- 1/2 cup lemonade
- 2 cups ice cubes
- 2 ounces light rum
- juice of 1 fresh lime
- candied ginger, for garnish, optional
- In your blender, combine the ginger and the lemonade. Blend things up as well as you can. Dump the mixture into a glass, then strain the ginger lemonade right back into your blender.
- Add the ice, rum, and lime juice and blend until smooth. Pour into a tall glass Garnish with a piece of candied ginger, and serve immediately.
