If you’re my Facebook friend, you’ve probably seen me talk about making cinnamon rolls pretty much every weekend for the past month. This is because of an amazing discovery that I can’t believe I only sorted out one month ago!

Here’s the thing: a lot of those store-bought tubes of crescent rolls are vegan. Just do some careful label-reading, since recipes change and different varieties can have dairy in them, but it should be pretty easy to find some kind of crescent rolls that are free of animal products.

Basically, what you’re making is a cross between crescent rolls and cinnamon toast. Here’s what you need:

1/4c non-hydrogenated margarine
3t cinnamon
2T brown sugar

1 tube of vegan crescent rolls

In a small bowl, whisk the margarine with the cinnamon and sugar.

Roll out the crescent rolls flat, and spread the cinnamon mixture evenly over all of them.

Roll them up, just like you would if they weren’t filled with decadent, cinnamon-y goodness.

Bake according to package directions.

Devour with friends and coffee!

Holy yum, you guys!

I’d fallen out of the breakfast habit, so in an effort to get back into eating the most important meal of the day, I decided to whip up a bowl of oatmeal after my run this morning. The thing is, it’s cold. It’s cold and also I didn’t want just a boring bowl of oatmeal, even with a handful of golden raisins. This warm, spiced bowl of goodness might just be the dish that gets me back to breakfast!

Chai Spice Oatmeal
1/2c instant oats
1c water or almond milk
1 small handful golden raisins
1/4t cinnamon
1 pinch each of ground ginger, cloves, and ground cardamom
1T brown sugar

In a large bowl, combine all of the ingredients and microwave according to the oatmeal’s package directions.

That’s it!

Do you guys have any other fun, oatmeal ideas? I definitely want to make this again, but I also want to make sure I’m not making the same thing every morning.

I thought I’d posted my trusty granola recipe before, but when I went back to look for it yesterday it was nowhere to be found! Luckily, I just whipped up a fresh batch of granola, and it came out deliciously!

I used almonds and dried cranberries, but pretty much any combination of nuts and fruit would work well. Cashew and apricot! Pumpkin seeds and dried cherries! Mixing up flavors is easy and fun.

Last night, it seemed like everyone I knew was baking! I wanted in on the fun, so, like my friend Leigh suggested, I grabbed some flour and got to it!

I wanted to bake something on the practical side, so I looked for a muffin recipe that would work for breakfasts during the week. We also have one million sweet potatoes in the kitchen, so that was a required ingredient. These oatmeal and sweet potato muffins from Recipe Thing did the trick!

The crumbly topping was nice and sweet, and it went really well with the muffins themselves which weren’t overly sweetened.

Usually, I change a ton of things about a recipe, but for the most part I left this one intact. We were out of wheat flour, so I used white, and we didn’t have sucanat, so I used brown sugar instead.

The baking time says 15-20 minutes, which seemed like a really big range for a baking time. Mine were ready in 15, so keep an eye on them if you decide to give this recipe a whirl!

Right, so I know…it’s Tuesday. But! I’ve been meaning since this weekend to say something about Pancake Sunday. We used to do pancakes on the weekends and fell out of the habit, but a couple of days ago I got in a pancakey mood!

I just love making pancakes because they’re pretty easy, sort of impressive, and total comfort food. Dave and I curled up on the couch with pancakes, Fringe (our newest TV obsession), and the cats. It was basically the perfect Sunday afternoon!

I used this recipe from Recipezaar straight up this weekend, but you can totally add mix ins like fruit, nuts, or chocolate chips too!

We ate ours up before I managed to snap a picture, so I snagged this Creative Commons photo by Crystl on Flickr to whet your pancake appetite!
I first started making this in college, when I’d worked my schedule to only have class on Tuesday and Thursday. The rest of the week was fantastical, but those two days were so packed with classes, I needed something to hold me over for a long time.

This is a good, cheap, filling breakfast. Perfect recession worthy food, as Jess over at Cupcake Punk would call it!

I’ve got directions for making this with steel cut or with rolled oats. I’ve been on a steel cut oats kick lately, but they take a bit longer to make. What you use is up to you!
