Sunday evening was one of those nights. Instead of cooking totally separate dinners this time, I decided to <a href="http://www.cooks.com/rec/view/0,1927,144171-238195,00.html" target="_blank">adapt his pork chop recipe</a> using tofu instead. The result was a glass pan full of comfort food! </p>
<p>This made four servings and was perfect with some broccoli sauteed in red wine and garlic to go with.<br />

			<content:encoded><![CDATA[<p>Right, so I know&#8230;it&#8217;s Tuesday.  But!  I&#8217;ve been meaning since this weekend to say something about Pancake Sunday.  We used to do pancakes on the weekends and fell out of the habit, but a couple of days ago I got in a pancakey mood!</p>

<p>I just love making pancakes because they&#8217;re pretty easy, sort of impressive, and total comfort food.  Dave and I curled up on the couch with pancakes, <a href="http://en.wikipedia.org/wiki/Fringe_%28TV_series%29">Fringe (our newest TV obsession)</a>, and the cats.  It was basically the perfect Sunday afternoon!</p>
<p>I used <a href="http://www.recipezaar.com/5-Minute-Vegan-Pancakes-132263">this recipe from Recipezaar</a> straight up this weekend, but you can totally add mix ins like fruit, nuts, or chocolate chips too!</p>
<p>We ate ours up before I managed to snap a picture, so I snagged this Creative Commons photo by <a href="http://www.flickr.com/photos/crystalflickr/80981277/">Crystl on Flickr</a> to whet your pancake appetite!<br />

Tonight, it happened.  It happened, and it was fantastical!</p>
<p>When I was at the store last night, <a href="http://lizerati.com">Liz</a> asked me what a pimiento even was.  It reminded me that, until my recent obsession, I didn&#8217;t know, either!  A <a href="http://en.wikipedia.org/wiki/Pimento">pimiento is a variety of pepper, usually available tinned or in little jars</a>.  We found them alongside the olives. When they&#8217;re not featured in pimiento cheese, you can find them stuffed into green olives.  </p>

It was addictive, and I don’t know of any places in Atlanta that serve it. The only solution, obviously, was to make my own. This picture was taken while it was still simmering on the stove. The finished product will be a little bit thicker.<br />
