			<content:encoded><![CDATA[<p>OK, so the name of this soup is sort of a lie. It&#8217;s more like black and white soup with some red and yellow. Also green.  Right.  So it&#8217;s a rainbow of a soup!<br />

<ul>
<li>1/2 an onion (any sort is  fine), diced</li>
<li>2-4 cloves garlic, minced</li>
<li>1 hot pepper, minced</li>
<li>1 yellow squash, diced finely</li>
<li>1/4c olive oil</li>
</ul>
<ul>
<li>3c water or veggie broth</li>
<li>4 bay leaves</li>
<li>1 can black beans, rinsed</li>
<li>1 can white beans, rinsed</li>
<li>1 handful grape tomatoes, halved</li>
<li>2 ears of corn, kernels removed (or 1c canned corn is fine)</li>
<li>sea salt to taste</li>
</ul>
<p>Turn the crock pot to high, and add the oil, onion, pepper, garlic, and squash.  Stir it up well and let that cook while you prep the remaining ingredients.</p>
<p>Once everything is prepped, stir it all into the crock pot and cook on high for 3-4 hours.  You could also do this on low overnight.</p>
<p>Serve with crusty bread!  Delicious!</p>

<p>OK, so I have a confession: I did not make this.  Dave made this dish on Sunday afternoon, while I sort of directed from a chair in the kitchen.  Until yesterday, I wasn&#8217;t allowed to do anything, basically, besides rest.  No sewing, no cooking, nothing.  I couldn&#8217;t wait to get the OK to be a real girl again!  Luckily, I have a wonderful mom and husband to help out.  Dave isn&#8217;t that into cooking, but he did a great job on these greens! 			<content:encoded><![CDATA[<h3><b>It&#8217;s cold and it&#8217;s raining and I finally remembered to pick up canned tomatoes at the store.  That means it&#8217;s chili time!</b></h3>

<p>This recipe is loosely based on several chili recipes I read this morning.  I sort of read five or six recipes, then opened the pantry to see what was actually in there.  I guess I&#8217;d been unconsciously stockpiling chili ingredients, because this turned out better than I could have imagined!</p>
<ul>
<li>2 leeks, chopped (white parts only)</li>
<li>4 cloves of garlic, minced</li>
<li>1 28 oz can of plum tomatoes with basil</li>
<li>1 15 oz can of black beans</li>
<li>1 15 oz can of garbanzos</li>
<li>2T chili powder</li>
<li>1 jalapeno, minced (I discarded the seeds, but you can use some or all depending on the heat you&#8217;re going for.)</li>
<li>sea salt and white pepper, to taste</li>
</ul>
<p>Dump everything into the slow cooker and cook on low for 6 hours or so.</p>
<p>I served this over mashed potatoes (recommended!), but you can also make rice or pretty much any grain or eat it solo.  You can also do all sorts of fun toppings, like cilantro, avocado, Tofutti sour cream, or scallions. </p>
<p>As always, this is open for interpretation.  If you don&#8217;t have leeks, try onions or even scallions!  You can use totally different beans, too or a chipotle pepper instead of a jalapeno.  That&#8217;s the best part about chili, I think &#8211; the versatility!  It&#8217;s perfect for freestyle cooking.<br />

<ul>
<li>1/2c bulgur</li>
<li>1/2c water</li>
<li>1c vegetable broth</li>
</ul>
<ul>
<li>2 cans of beans (Your choice! I used pinto and black beans), drained</li>
<li>1 can diced tomato</li>
<li>3 stalks celery, diced</li>
<li>2T chili powder</li>
<li>1T cumin</li>
<li>2-4 cloves minced garlic</li>
<li>1 chile in adobo sauce, diced without seeds (If you like things hotter, you can leave in some or all of the seeds)</li>
<li>2T olive oil</li>
</ul>
<ul>
<li>1 Haas avocado, diced</li>
</ul>
<p>Mix the bulgur, water and broth in a small pan. Bring to a boil, then reduce heat to low and simmer while you get everything else together.</p>
<p>Toss the remaining ingredients, except for the avocado, into your crock pot, then stir in the bulgur. Set the crock pot to low and cook for 4 hours.</p>
<p>Top each bowl with a little avocado!</p>

<p>I finished up three new Lunch Kits which are now up in the shop!  Woo!  The orange Banner Day one is my favorite of the bunch.  It&#8217;s a bit slouchier than the usual ones, because the vintage linens it&#8217;s made from are soft like butter.</p>
<p>The plan was to make more Lunch Kits, but I decided to leave that for the weekend and get into the kitchen instead.  I&#8217;ve been trying to learn the ins and outs of crock pot life, and it&#8217;s been really fun to dump things in there and see what happens.  It&#8217;s not as rigid as I thought it would be!
