<p>My pal Robert&#8217;s birthday was this weekend, and we headed to his house for a sushi party! The rule at Rob&#8217;s sushi parties is that everyone has to name their rolls before we&#8217;re allowed to eat them. I made  a &#8220;Swamp Thing&#8221; with avocado, mushrooms, and scallion topped with seaweed flakes; &#8220;Mushroom Bomb&#8221; with mushrooms and jalapeno; and a &#8220;Dark Side&#8221; with avocado, scallion, and pickled radishes topped with black sesame seeds. YUM!</p>
<p>For some reason, I got it into my head that I needed to bring a dessert, and what goes better with sushi than green tea and ginger? Nothing, I say! These whoopie pies were a total hit, and they weren&#8217;t hard to make at all. You can bet I&#8217;ll be making them again soon.</p>

<p><a href="http://eatdrinkbetter.com/2010/05/26/eating-vegan-the-gelatin-problem/" target="_blank">Gelatin is not vegan</a>. It&#8217;s not even vegetarian! Conventional gelatin is made from ground up bones and tendons. YUM! Some folks have told me that Kosher gelatin is vegan, but from what I&#8217;ve read, it&#8217;s derived from dead fish.</p>
<p>Luckily, you don&#8217;t need powered bones to make a jelly dessert. You can just grab some agar agar and get to it!</p>
<p>Confession: I am not a big booze-drinker. At most parties, I&#8217;d much rather stick to beer or wine. The way to get me to do the booze thing is to hide it in desserts, so when my friend Kip said that she wanted to make grown-up vegan jello shots for her birthday party, I was all in!</p>
<p>We made root beer shoots and cosmopolitan ones, and we learned some lessons. For the cosmo shots, we used exactly the amount of agar that the recipe called for. For the root beer ones, we doubled it. The cosmo ones came out OK, but they were a little bit soft. The root beer ones&#8230;.I think I&#8217;m still chewing the root beer one that I tried. The lesson: use one and a half times the amount of agar agar! Here are the recipes we used (adapted from <a href="http://jelly-shot-test-kitchen.blogspot.com" target="_blank">Jelly Shot Test Kitchen</a>), adjusted accordingly.</p>

<h3>Vegan Cosmopolitan Jello Shots</h3>
<p><strong>Ingredients</strong></p>
<ul>
<li class="ingredient"><span class="amount">1c</span><span class="name"> cranberry juice (the 100% juice blend kind)</span></li>
<li class="ingredient"><span class="amount">1c</span><span class="name"> orange vodka</span></li>
<li class="ingredient"><span class="amount">1/4c</span><span class="name"> lime juice</span></li>
<li class="ingredient"><span class="amount">1/4c</span><span class="name"> orange liqueur</span></li>
<li class="ingredient"><span class="amount">1 3/4</span><span class="name"> agar agar powder</span></li>
<li class="ingredient"><span class="name">lime zest</span></li>
</ul>
<p><strong>Cooking Directions</strong></p>
<ol class="instructions">
<li class="instruction">In a small saucepan, heat half of the cranberry juice and lime juice with the agar agar, until it&#8217;s simmering. Stir for a few minutes, until the agar agar is fully dissolved.</li>
<li class="instruction">Quickly add the rest of the juices, stir, then add your booze.</li>
<li class="instruction">Pour the mixture into a square pan and chill for a few hours, until everything is gelatinized.</li>
<li class="instruction">Flip your jello shots onto a flat surface, like a cutting board, and slice them into cubes. Grate some lime zest over them, and you&#8217;re ready to serve!</li>

<h3>Vegan Root Beer Jello Shots</h3>
<p><strong>Ingredients</strong></p>
<ul>
<li class="ingredient"><span class="amount">1c</span><span class="name"> root beer</span></li>
<li class="ingredient"><span class="amount">1 1/2t</span><span class="name"> agar agar powder</span></li>
<li class="ingredient"><span class="amount">2/3 cup</span><span class="name"> root beer flavored vodka (I think you could use regular vodka or vanilla vodka instead.)</span></li>
<li class="ingredient"><span class="name">toothpicks</span></li>
</ul>
<p><strong>Cooking Directions</strong></p>
<ol class="instructions">
<li class="instruction">Bring the root beer to a simmer on the stove, and stir in the agar agar. Keep stirring on low heat until it&#8217;s fully dissolved.</li>
<li class="instruction">Remove the pan from the heat, and add your booze, then pour the mixture into a square pan.</li>
<li class="instruction">Chill for a few hours, until everything is gelatinized.</li>
<li class="instruction">Flip your jello shots onto a flat surface, like a cutting board, and slice them into cubes. Add your toothpicks, so folks can eat them like fancy finger food!</li>
</ol>
<p><strong>Of course, now I&#8217;m a little bit obsessed with agar agar. I&#8217;d never cooked with it before, and it set up like magic! Have you guys made any cool vegan jello shots or anything else with agar agar? I want to play around with it some more!</strong></p>

It turns out, there are mulberry trees all over my neighborhood!  On Friday, the birds got to our tree out back before I did, so there were maybe five mulberries that I could reach on there. Dangit!</p>
<p>Luckily, I remembered a really heavily-producing tree just a block away!  My little sister, bless her heart, agreed to stop with me on the way to my house from the airport on Friday, so that we could gather the four cups of mulberries you need to make a buckle.</p>
<p>Our fingers were purple by the time we&#8217;d finished, but we were able to collect a serious mulberry bounty!  We headed straight home to buckle down!<br />

Regardless, I keep ending up in the kitchen hoping that I&#8217;ve still got enough pan liners, powdered sugar, and flour!</p>
<p>These orange ginger cupcakes were inspired by the beautiful oranges that arrived in our <a href="http://vegetablehusband.com/">Vegetable Husband</a> baskets last week.  </p>
<p><i>Orange Ginger Cupcakes</i><br />
Whip up a batch of your favorite vanilla cupcake recipe with the following changes:</p>
<ul>
<li>Use half white and half wheat flour instead of all white flour.</li>
<li>Add 1/4t orange extract, and omit any other extracts the recipe calls for.</li>
<li>Fold 2t grated ginger and 2t grated orange zest into the batter.</li>
</ul>
<p><i>Ginger Frosting</i><br />
1/4c non-hydrogenated vegetable shortening<br />
1T grated ginger &#8211; A food processor works best. The finer the better!<br />
1 3/4c powdered sugar<br />
1-2T almond milk, as needed</p>
<p>Whip the ginger and shortening together until very well combined, then whip in the powdered sugar until the frosting is totally smooth.  Add almond milk by the teaspoon, if it needs thinning out.  </p>
<p>Frost the cupcakes just before serving.  I used a spoon to just put a generous dollop on top of each one this time, since the recipe made so much frosting!<br />

You could also use your favorite vanilla cupcake recipe, if you prefer.  Just make these simple substitutions and additions:<br />

<p>I had a craft market this weekend, and we tend to have very little food in the house after I&#8217;ve spent the weekend tending a booth.  Unfortunately, my belly didn&#8217;t get the message, and I could not shake a craving for COOKIES.</p>
<p>Normally, if a cookie craving strikes, I whip up a batch, but I was pretty pooped after a busy weekend.  Luckily, we did have the makings for some whole grain cinnamon toast! Hurrah!</p>

<p>Obviously, needs to happen in my kitchen ASAP.  It is 100% on, and I want to try to do it by <a href="http://allrecipes.com/Recipe/Maple-Fudge/Detail.aspx">veganizing this recipe</a>.  </p>
<p>The plan is to sub Silk creamer for the light cream, almonds for the walnuts, and possibly use additional maple syrup in place of the corn syrup, since that&#8217;s not something I&#8217;m too into buying.   </p>
<h3>Here is my reason for this post</h3>
<p>So, I&#8217;m planning to give this a whirl over the weekend most likely and wanted to get some feedback from you guys on my veganization plan.  <b>Do you think it&#8217;s going to work?</b> Someone suggested agave instead of corn syrup, or I could pick up brown rice syrup if you think the syrup is mission critical. </p>
<p>Not that I&#8217;m scared of <a href="http://www.glueandglitter.com/main/2010/02/24/cooking-experiment-steel-cut-oats-in-the-rice-cooker/">a cooking fail</a>, but it&#8217;s more fun to end up with a tray of delicious fudge than to&#8230;.not end up with a tray of delicious fudge!</p>
