<p>Inspired by <a href="http://www.flickr.com/photos/hotbikes/3768518587/">Leuwam&#8217;s pickled grapes</a>, I decided to give this pickling thing a try.  You guys!  I want to pickle everything now.   Since this was my very first time pickling anything, I thought I&#8217;d play it safe and try some simpler recipes.  A little googling and a chat with <a href="http://www.lizerati.com/">Liz</a> left me with two recipes that felt pretty manageable.  Of course, I can never leave well enough alone, so here are my adapted versions!<br />

			<content:encoded><![CDATA[<p><a href="http://vegetablehusband.com/">Vegetable Husband</a> has been rich with green beans for the past two weeks, and it was time to branch out a little.  This recipe was a total hit!  I hope this green been trend continues.</p>
<p><img src="http://glueandglitter.com/main/wp-content/uploads/2009/07/tofu%20and%20green%20beans.jpg" width="450"/></p>
<p>We had these with a side of mashed potatoes, and it was perfect!  It would also be great over rice or noodles.</p>
<ul>
<li>1 block firm tofu, cubed</li>
<li>4 cloves garlic, minced</li>
<li>2T mushroom (or your favorite) soy sauce</li>
<li>2T sesame oil</li>
<li>2c green beans, cut into bite-sized pieces and stems removed</li>
<li>1/4c vidalia onion, diced</li>
<li>hoisin sauce (optional)</li>
</ul>
<p>In a bowl, toss the tofu with the garlic and soy sauce.  Set that aside to marinate while you prep everything else.</p>
<p>Heat the sesame oil in a large skillet or wok and add the tofu mixture and onions.  Cook on medium high until the tofu starts to brown, then add the green beans.  Saute for a few minutes more, until the green beans turn bright green and soften just slightly.</p>
<p>Serve!  Drizzle some hoisin sauce over the top, if you like.<br />

This here represents the entire yield from my three bean plants, but there are some more little fellas that will be ready to pick by the end of the week.</p>

<p>It may not have been many beans, but it was satisfying to munch on them while Dave, Ally, and I watched Alias. If you think I&#8217;m proud now, wait until the squash and cucumber plants start producing!<br />
