<h4>Oh My Daiya! The Best Vegan Cheese Ever.</h4>
<p>For so many vegans, cheese was <a href="http://eatdrinkbetter.com/2010/01/14/eating-vegan-the-cheese-problem/" target="_blank">one of the toughest things to give up</a>.  The quest for good, melty, tasty vegan cheese is a noble one. </p>
<p>The other problem with a lot of faux cheeses is that they&#8217;re often made from soy.  It&#8217;s so easy to fall into the <a href="http://www.care2.com/greenliving/beyond-tofu-four-tasty-vegan-soy-alternatives.html">soy trap</a> when you&#8217;re eating vegan.</p>

<p>You guys, this came out so deliciously!  It made enough pasta for eight servings or so, and it tasted even better the next day.  I loved dressing up the leftovers with mix ins: hot sauce, sunflower seeds, steamed spinach.  Between all of the creative additions, it didn&#8217;t even feel like I had the same lunch for three days in a row!</p>

Add the garlic I had left over from last week&#8217;s delivery, and this recipe really wrote itself.</p>
<p>This salad would be a perfect side to bring to a summer cookout!</p>
<p><i>Pasta Salad with Lime-Basil Aioli</i></p>
<ul>
<li>handful of fresh basil leaves</li>
<li>juice of 1/2 a lime</li>
<li>2-3 cloves of garlic</li>
<li>1/2c Veganaise</li>
<li>1/4c onion, chopped</li>
<li>salt and pepper, to taste</li>
<li>2T nutrutional yeast, optional</li>
<li>5c cooked pasta of your choice</li>
<li>1c frozen peas and carrots, defrosted and well drained</li>
</ul>
<p>In a blender or food processor, whizz the basil, lime, and garlic until everything it nicely chopped.  Stir in the Veganaise and onions.  Add the salt, pepper, and nutritional yeast (if you&#8217;re using it).</p>
<p>In a large bowl, combine the pasta with the peas and carrots.  Add the sauce, and stir well.  Chill until you&#8217;re ready to serve!</p>

I&#8217;d never cooked with sorrel before, but my mom did a little googling while we were gabbing and mentioned sorrel pesto.  Sorrel! Pesto!  This was so on.  I was able to make this with just ingredients from my pantry, and it was fresh and delicious tossed with some whole wheat pasta.</p>
<p>Sorrel has sort of a tangy, lemony flavor.  Every recipe mom saw advised that you remove the center ribs from the leaves, so I&#8217;m guessing that&#8217;s a standard part of prepping the stuff.  The leaves have a pretty strong flavor, and I bet those ribs are even more tangy!</p>
<p><b>Sorrel Pesto</b></p>
<ul>
<li>1 1/2c sorrel, ribs removed</li>
<li>1/2c almonds (you could use any nuts or seeds you like in place of the almonds)</li>
<li>3 cloves of garlic</li>
<li>1/2c olive oil</li>
<li>1/4c nutritional yeast</li>
<li>salt and pepper, to taste</li>
</ul>
<p>Toss everything into the blender except for the nutritional yeast, salt, and pepper.  Blend, scraping down the sides of your blender as needed, until the mixture turns semi-smooth.  A few chunks of nuts or sorrel here and there are totally fine.</p>
<p>Pour the mixture into a large bowl and stir in the nutritional yeast, salt, and pepper.  Toss with freshly cooked pasta!</p>
<p>This would also be a great dip for bread or as a sandwich spread.  So many possibilities!  I added some steamed broccoli to the pasta, because broccoli also came with our <a href="http://ecolocalizer.com/2008/12/02/eating-local-with-vegetable-husband/">Vegetable Husband</a> this week!</p>

<p>Mac and Cheese is one of the things I missed most when I went vegan.  This recipe has all the creamy goodness that I missed without the cheese!  When I was growing up, my pops would add frozen peas when we had mac n cheese for dinner.  I think it was partly to add some nutrition and partly to make the food stretch a bit more during lean times.  Whatever the reason, the combination makes me nostalgic.<br />
