If you’ve been following the site lately, you’ve probably figured out that I. love. SUMMER! Things are just a bit more mellow, it’s shorts weather all the time, and around here it means planning a beach vacation with my in-laws! Our beachy plans are a bit up in the air this year, but that hasn’t stopped me from poring through my fellow Eco Etsians’ shops for seaside inspiration…

You guys, it is SUMMER!

I have to admit, that I’m a summer fan, despite the sweltering temperatures. My pal Christy decided that this year she’s going to do all manner of summery things, and it got me thinking about all of the things I love about this time of year. I hope this inspiration board gets you pumped about crafting and cooking this summer, too!

At the summer Indie Craft Experience, I kept cool with this pineapple habanero popsicle from King of Pops! It’s easy peasy to make your own creative pops! All you need is a good popsicle mold and your imagination.
There’s something about making pinwheels that just screams summer to me! The ones pictured above are from a really cool project called Pinwheels for Peace.
All of those frosty drinks need some embellishment! Apartment Therapy shows you how to whip up a set of DIY drink umbrellas! Bonus points if you make yours from junk mail or book pages instead of raw materials.
What would summer be without a bowl of ice cream? Clean Green Simple shows you how to make your own vegan ice cream from scratch, with no ice cream maker required!
If you’re big on summer grilling, Man Made shows you how to turn a canvas tote bag into a functional BBQ apron.

Bean and Corn Salad

Man, I’m going to miss all the awesome corn that’s been coming in our summer baskets from Vegetable Husband!

Bean and Corn Salad

2 ears corn, raw or cooked
1 can pinto or black beans, rinsed
2 scallions, minced
1/4c olive oil
2T hot sauce
2T chili powder
1 Haas avocado, diced
1/2c salsa

You could use an equivalent amount of frozen or canned corn, but it’s so much tastier right off the ear! To remove the kernels, hold it upright at the tippy top, and cut downwards along the cob. You’ll want to do this over a large bowl or kernels will go everywhere. Be super-duper careful while you do this, please! Finger is not a good spice in this dish. Don’t cut tooo close to the cob – better to lose a little meat than to have cob in your salad!

Toss the corn with the beans, scallions, olive oil, chili powder and hot sauce. If you’re making this in advance, here is your stopping place. Cover and chill until you’re ready to serve – up to overnight.

Just before serving, toss in the salsa and the avocado. If you want to get fancy, reserve a little avocado to put on top! I did not get fancy, as you can see in my picture. In fact, I was halfway through the bowl when I realized I should take a picture! D’oh!

Summer Pineapple and Cucumber Gazpacho

Dave’s been in a grilling mood lately, and I’ve been spoiled by not having to turn on the oven. I wanted something fresh but not salad-like to go alongside my grilled potatoes and okra the other night and remembered that I’d been wanting to try making a cold summer soup. It was perfect!

Summer Pineapple and Cucumber Gazpacho

1 pineapple, in chunks
2 cucumbers
1/2 vidalia onion
1 handful fresh cilantro
1 banana pepper (Use more or less depending on how much heat you like!)
salt and pepper, to taste

Dump everything into your food processor and blend until you get your desired consistency. Mine is blended pretty smoothly, but I know some folks like their gazpacho chunkier. You could even blend just a portion of the ingredients and dice everything else up finely. It’s really a matter of taste!

Chill the soup until you’re ready to serve. It’s fine to serve right away but even more delicious if you let it chill for a few hours or even over night!

Tomato Sandwich Heaven

It’s been hot here lately. I mean….HOT. Sometimes, I just can’t muster up the power to stand over the stove or oven at the end of the day. Enter the summer of the sandwich! Vegetable Husband delivered the perfect heirloom slicing tomato this week along with a bag full of arugula. It was so on.

Tomato Sandwich #1

one oatmeal (or your favorite) bagel, halved
Follow Your Heart cream cheese
6-8 leaves of fresh basil
handful of arugula
onion, sliced
generous slices of tomato
1/4 Haas avocado, sliced
lemon juice

OK, this first part is optional, but I come from a family of bagel scoopers. Using your fingers, gently scoop out the excess dough from your bagel. This creates a delightful resevoir for holding the goods. If you’re not a scooper, that’s cool too. Just skip this step entirely!

Spread the cream cheese onto your bagel, then top with: basil, arugula, onion, tomato, and avocado. Squirt some lemon juice on top, and you’re ready to eat!

Vegan Ice Cream Challenge

It’s been hovering in the upper 90s here in Atlanta, and weather like this makes me crave ice cream like no other. This year, I’m on the hunt for my favorite vegan ice cream! The plan is to try new pints each week and share my findings over at Eat. Drink. Better. I know, it’s a tough life I’ve got.

You can check out the first installment – Ice Supreme, which went up last week. A new one is going up tomorrow, so check back over there for another vegan ice cream review!
