Happy Thanksgiving! Dave and I are spending the holiday in Florida doing some cooking, playing with our nephews, and seeing his family. I hope that you’re having a super wonderful holiday, too!

I know, it’s totally cheesy and sappy, but I like to take time on Thanksgiving to think about what I’m thankful for. I mean, isn’t that part of what #lml is all about? This year has been a big one, and I’m feeling grateful to have such a strong support system of friends and family. When times get tough, it’s a lot easier to navigate when you’re surrounded by awesome people. I’m thankful for all of you!

Vegan Thanksgiving, Post Thanksgiving

It’s become a tradition with my husband’s family that we eat out on Thanksgiving. His aunt and uncle are the only ones with a large enough home to host the 20 folks who descend on Atlanta each November, and they just got tired of the cooking and cleanup. If Dave and I could host a party that large, I’d totally offer to host, but our house just doesn’t have the space for so many folks. Maybe someday!

Lunch on Thanksgiving was awesome. Dave and I sat with the kids, and I love spending time with my in laws, nieces, and nephews! After lunch, we headed back to Dave’s aunt and uncle’s place to take some family photos and gab.

It was a fun day with family for sure, but the veggie plate at Horseradish Grill left me a little unfulfilled. It definitely didn’t feel like the Thanksgiving feast of my dreams. So! I decided to whip up my very own, personal, vegan Thanksgiving on Saturday before our tree trimming party. It was everything I dreamed it would be! Almost!

I cooked up: a Field Roast; roasted carrots, turnips, and shallots; and slow cooked collard greens. Yum!

There was supposed to be a butternut squash pudding, adapted from this recipe, but it did not work out at all. I think I failed when I steamed the squash in advance rather than grating it like the recipe says. What was I thinking? A friend suggested getting a loaf of stale bread and turning my failed pudding into a bread pudding. It’s worth a shot! It tastes delicious, but it never set properly.

Did you guys have a delicious, vegan Thanksgiving? I’d love to hear about what you made! This was my first year cooking up a mini feast, but I definitely want to plan a menu for next year!

Pickled Daikon and Avocado Salad

After a delicious Thanksgiving lunch at 103 West and a good, long nap, I woke up wanting a little snack! I know, I’m probably the only person who needs a snack after their Thanksgiving meal. What can I say?

We were fortunate to receive a humongous daikon radish and a large, Florida avocado in our Vegetable Husband basket last week. I didn’t get to do a lot of cooking, so I decided to extend the daikon’s life by making a pickle. I basically followed this pickled daikon recipe from Food Network, though I used half rice vinegar and half apple cider vinegar. The pickle came out great! It was fantastic in this simple salad, and I can’t wait to make sushi with it!

Pickled Daikon and Avocado Salad
1/4c avocado, diced
1/4c pickled daikon, diced
1t hot sesame oil

Toss the ingredients together in a bowl.

That’s it! This would have been nice with a bit of diced tofu and some sesame seeds, if you were looking to make it a bit more filling. You might want to use 1t of the brine to dress the tofu if you go this route.

The fixed menu meal at 103 West was far from vegan. I’ve gotten pretty good at eating around the meat and dairy, so I asked the server for oil and vinegar for my salad instead of creamy Walfdorf dressing. “I’m vegan,” I explained. Less than five minutes later, the chef came out to talk about making me a vegan plate, and I have to say it was delicious! He cooked up roasted carrots, turnips, and Brussles sprouts in a light tomatoey sauce and topped the whole thing with gnocchi. It was hearty, filling, and delicious! you can bet I’ll be recreating that sometime soon!

Happy Thanksgiving, you guys!! I know it’s a bit on the hokey side, but I just am grateful for so many things that it was impossible to pass up a chance to say so! I’ve had really tough times this year and completely awesome times, too!

I feel so lucky that I’ve had my husband, friends, and family around to help me through when things got really hard. I think one of the upsides to hard times is that you really get to see folks’ true colors, and you guys overwhelmed me with support and kindness this year. Whether you’re here in Atlanta or living far away, I couldn’t have made it through some of the things life threw at me without you!

Even better: those same people were there to share the good times! Lots of exciting things happened this year, the most exciting of which was probably quitting my dayjob to do this crafting and blogging thing full time. Moments like this are a million times more awesome because I have my friends and family to share them with me!

If I could bake you guys a million cupcake, I totally would. I hope you are having a lovely Thanksgiving!

I’ll be spending Thanksgiving tomorrow with the lovely folks pictured up there. I’m grateful to be a part of their family and for my family in Florida, Washington, France, and Arizona. I’m grateful for the sweet kitcats that keep my feet warm at night, and that I’m blessed with the best friends a girl could ever ask for. Sometimes I get bogged down in the details and forget how lucky I am to have the life that I do, and I’m glad to have a day set aside for remembering how good I’ve got it. So thank you.
