Well, the final roundup for Vegan MOFO III anyway. What an awesome month of food it’s been! Participating has really challenged me to up my game in the kitchen, and I’ve connected with so many amazing vegan bloggers. This year’s installation isn’t even over yet, and I’m looking forward to Vegan MOFO IV!

Well, the final roundup for Vegan MOFO III anyway. What an awesome month of food it’s been! Participating has really challenged me to up my game in the kitchen, and I’ve connected with so many amazing vegan bloggers. This year’s installation isn’t even over yet, and I’m looking forward to Vegan MOFO IV!

  2. Kittee did an awesome job facilitating the MOFO, and I can’t believe I haven’t posted any of her recipes yet! This Bun in a Bowl looks out of control.
  3. The Voracious Vegan posted this Patty Melt recipe on Tuesday, and it’s been on my mind ever since.
  4. I would like a bowl of The Vegan Mouse’s Tunisian Style Spaghetti right now, please!
  5. Cute and Delicious posted spooky ghost cookies just in time for Halloween.
  6. And of course, I couldn’t resist these Platskis, because you know I love a good potato-based recipe!

Hurrah! I’m going to try to keep the good cooking momentum going, even though the MOFO is over. Fingers crossed!

So my little sister, Amanda, is a pretty rockin’ cook. We both ascribe to the philosophy that you should experiment and not be afraid to deviate from a recipe. Last night, she told me about this tasty salad that she made, and I thought it would be just perfect for Vegan MOFO!

Sisterly Salad

The recipe is adapted from this one over at Yum Sugar.

Sisterly Salad

  • seeds of 1 pomegranate
  • 1 peach
  • 1 persimmon
  • some thin sliced red onion
  • 1 bag of spinach (she says that next time she wants to try arugula)

Toss the ingredients in a large bowl, squeeze a lemon over it, and drizzle with olive oil. Fresh black pepper and a little kosher salt for dressing brightens everything up.

Nice work, Amanda! Just looking at that salad is making me hungry!

Sometimes, I get home and am just beat. I mean….BEAT. On those days, the thought of standing over the stove to cook is just more than I can bear. On those days, there is nothing to do but come up with the laziest possible way to put a meal together. Enter the stirbake.

Sometimes, I get home and am just beat. I mean….BEAT. On those days, the thought of standing over the stove to cook is just more than I can bear. On those days, there is nothing to do but come up with the laziest possible way to put a meal together. Enter the stirbake.

Stirbake

Stirbake!

  • 1 package firm tofu in bite-sized cubes
  • 1 c baby broccoli, stems removed (Save the stems for snacking on raw. They’re delicious!)
  • 1 package sliced mushrooms, any kind you like
  • 1/2 a vidalia onion, diced
  • 1 8oz jar of stir fry sauce (I used Trader Joe’s Chinese 5 Spice)

Preheat the oven to 400F and prep your veggies and tofu. Combine everything in a dutch oven or deep baking dish, stirring to get it all nice and coated in sauce. Bake, covered, for 30-40 minutes.

Serve over noodles or rice!

Easy. Peasy.

Instead of canned tomatoes, the liquid in this chili comes from canned pumpkin and broth. It turns into a stew-like business and is totally delicious!

  • 1 16oz can pureed pumpkin
  • 1 16oz can chick peas
  • 1 16oz can pinto beans
  • 1 sweet onion, diced
  • 2cloves garlic, minced
  • 1T chili powder
  • 2t coriander
  • 1/2t cinnamon
  • 1/2t ground cloves
  • 1 chili in adobo sauce, minced with seeds removed (for more heat, leave in all or part of the seeds!)
  • 1T brown sugar
  • salt and pepper, to taste
  • 2c veggie broth

Toss everything into a crock pot and cook on high for 2 hours.

This is delicious on its own or topped with diced avocado! YUM.

So spill it! What’s your very favorite cold weather recipe? It’s supposed to be a doozy of a winter this year, and I want to be armed with lots of comfort food ideas!

So earlier this week, Leigh asked for folks’ favorite chocolate chip cookie recipes, and I realized that I’d never posted mine! Well, that’s just no good. That’s just no good at all!

I totally agree with Leigh on this one….chocolate chip cookies are excellent comfort food. With the weather being all Fall-like and rainy, it’s total cookie season! So! Here is the recipe for my very favorite cookies: chocolate chip with dried cranberries and cashews. Decadent!

Vegan Shepherd’s Pie

Ingredients

4 baking potatoes 2T margarine 1/3c soy milk 1t white [...]]]> OK, so I’ve posted a Shepherd’s Pie recipe before, but! It’s pretty much different every time I make it. This batch came out really well, so I thought this family fave deserved revisiting!

Shepherds Pie

Vegan Shepherd’s Pie

Ingredients

  • 4 baking potatoes
  • 2T margarine
  • 1/3c soy milk
  • 1t white pepper
  • 1 block tofu, cubed
  • 8oz button mushrooms, sliced
  • 2T olive oil
  • 1c veggie or no-chicken broth
  • 1c frozen peas and carrots
  • 1/4c nutritional yeast

Cooking Directions

  1. Cook the potatoes either in the oven or the microwave, then mash them up with the soy milk, margarine, and pepper. Don’t fret if things are a bit dry. You’ll be adding some broth in just a few minutes!

  2. In a large frying pan, heat the olive oil and saute the tofu and mushrooms for a couple of minutes, then add the broth, peas, and carrots. Simmer until the mushrooms soften.

  3. Now would be a good time to preheat your oven to 400.

  4. Scoop out about half of the liquid from the pan and add it to your potatoes. Mash them up a bit more, then spread half of the potato mixture evenly on the bottom of an oiled 8X8″ baking dish.

  5. Add the veggies and the rest of the liquid from the pan, then spread the remaining potatoes over the top of the veggies. Sprinkle your nutritional yeast on top, then bake for about 20 minutes, or until the potatoes brown.

  6. Serve!

This shepherd’s pie recipe makes a great, hearty meal for the cold rainy weather we’re having this week!
