Curried lentil hummus is so easy to make, and such a pretty yellow from the turmeric in it!
Hey there, fellow potluckers! I’m super excited to be participating in the Virtual Vegan Potluck and can’t wait to see what other tasty dishes folks are coming up with. I signed up to bring a side dish and wanted to come up with something easy that’s got those deep seasons that I think of when I imagine fall food. This curried lentil hummus was just the thing!
This recipe was also an excuse to try something I’d heard you could do but never tried on my own: making lentils in the rice cooker! I’ve used my rice cooker to make lots of different grains – including one disastrous attempt at using it for steel cut oats – but I’ve never branched out beyond grains and starches. My lentils cooked up in the rice cooker like a dream!
Making Lentils in the Rice Cooker
Making rice cooker lentils is so much easier than cooking them on the stove! All you need are:
- 1 part lentils
- 2 parts water
- 1 tablespoon of oil – olive, sesame, etc
- any spices you want to use – cumin, coriander, garlic, etc
Toss everything in the rice cooker, turn it to cook, and when it clicks off, your lentils are done!
Curried Lentil Hummus Recipe
- 2 cups red or yellow lentils, cooked
- 2 tablespoons toasted sesame oil
- 2 cloves garlic
- 1 teaspoon curry powder
- 1 teaspoon turmeric
- 1 teaspoon ground cumin
- 1 pinch cloves
- 1 teaspoon coriander
- juice of 1/2 a lemon
- up to 1/2 cup water, as needed
- Throw all of the ingredients into your blender or food processor, except for the water.
- Blend until smooth, adding the water a bit at a time, as needed, to get it to a nice, hummus-y texture.
This was delicious with chips for dipping or mixed into a big bowl of roasted beets, sweet potatoes, and onions (a recipe adapted from Manis Kitchenworks’ Maple Roasted Vegetables). You could also use it as a filling for a sandwich or taco, or really any other way you’d use chick pea hummus.
