This grilled avocado sandwich is a favorite quick lunch that I've been making for almost 10 years now. I love how versatile it is and how quick and easy it is to make!
There's no cheese -- vegan or otherwise -- in this sandwich. Generous slices of avocado and a schmear of sriracha mayo bring all the creaminess needed.
🥑 Ingredients and substitutions
- vegan mayo - The sriracha mayo adds creaminess, a little heat, and umami to this amazing avocado sandwich.
- sriracha sauce - If you don't like spicy, use the smallest amount of sriracha. Feel free to use a teaspoon or more if you want more heat!
- bread - Choose a good bread that you like to eat! I love a good, whole grain bread for this sandwich.
- tomato - Big ol' tomato slices contrast so well with the rich avocado.
- arugula - Feel free to use other greens, like spinach or baby kale, if you prefer.
- avocado - Get yourself a ripe avocado! If your avocados are always going bad, don't miss my helpful guide to storing avocados so they'll last up to a week.
- olive oil - To grill the avocado sandwich. You can use vegan butter for an even more decadent result, if you prefer.
🍅 How to make a grilled avocado sandwich
Whisk together the mayo and the sriracha sauce. BOOM! Sriracha mayo!
Spread the mayo on both slices of bread, then layer on the tomato, arugula, and avocado. Close up your sandwich and use the palms of your hands to gently press it as flat as you can without making the goods fly out.
Heat the oil in a skillet on medium heat, and drop in your sandwich into the pan. Cook for four minutes, flip with a spatula, and cook for three more minutes.
You can use the spatula to gently flatten the sandwich a bit more while it’s in the pan. Just don’t press hard – you want it to be nice and compact, but you don’t want it sliding apart or pushing the tomato out.
If you like a toastier sandwich, you can do another minute per side at the end (that’s two extra flips).
Flip the sandwich onto a cutting board, cut it in half, and serve.
💡 Helpful tips
- Pressing the avocado sandwich before grilling is key, otherwise it will fall apart when you flip. Just use the palm of your hand and press evenly. Use your other hand to nudge any runaway ingredients back into the sandwich.
- You can press the sandwich even more while you're grilling it up in the pan, if you like.
