Did you grow up eating creamsicles? I have fond memories of chasing down the ice cream truck to get my hands on one and eating it on the curb in the summer heat.
We don't get ice cream trucks around here, but I can satisfy that orange-cream craving with a hot bowl of creamsicle overnight oats instead! It's so easy to make with just a few ingredients.
Is it the same as a creamsicle? Obviously not. But it hits the spot for orangey, creamy goodness!
🍊 Ingredients and substitutions
- unsweetened vegan yogurt - I like to use my homemade soy yogurt, but store-bought is also fine.
- vegan milk - I'm using soy milk for the protein and because I think it's the superior plant-based milk, but choose any unsweetened, creamy vegan milk you like.
- orange zest - You can use oranges or tangerines in this recipe. Reserve some of the orange for topping, too.
- maple syrup - To sweeten. You can use your sweetener of choice, if you prefer.
- vanilla extract - For even more creamsicle flavor!
- oats - For the oatmeal! Use regular rolled oats, not quick oat or instant.
🫙 How to make creamsicle overnight oats
Combine the yogurt, milk, zest, maple syrup, and vanilla in a medium bowl. Mix well, then stir in the rolled oats, being sure to coat them evenly in the yogurt mixture.
Transfer to your jar or jars.
Stick the oats in the fridge, and in the morning, you can enjoy a creamy bowl of nostalgia. Top with chopped orange for even more orange flavor!
