Making Your Ginger Puree
This ginger blueberry green smoothie uses fresh ginger puree. Making the ginger puree is super quick – way faster than mincing ginger by hand – and it’s a really handy thing to have around. Make yourself a batch, and you can scoop up ginger for recipes, as needed.
It keeps for 3-4 days in the fridge. If you make more than you need, just pour the mixture into an ice cube tray. A standard ice cube is 2 tablespoons, so it’s easy to pop out and defrost a cube whenever you need some fresh ginger for a recipe.

Ginger Blueberry Green Smoothie
Yield: 1 serving
- 1 banana
- 1/2 cup frozen blueberries
- 1/4 to 1/2 cup kale, ribs removed
- 1-2 tablespoons ginger puree (see above)
- 1 tablespoon flax meal
- 1/2-1 cup water, as needed to get things moving
- 4 ice cubes
- Puree until smooth.
