Review
This isn't the first product that we've reviewed in Target's new Good & Gather line. We've also tried their Plant-Based Dips and Spreads and their Frozen Falafel.
The label doesn't specify whether they bake or deep fry these wings before packaging them, so chances are they are deep fried, like conventional buffalo wings. The coating is nice and crunchy with a lovely kick from the buffalo sauce.
The inside, though, is where these wings really stand out for me. They're not made from whole cauliflower florets. Instead, shredded cauliflower is the base for a toothsome, tender, nugget-like inside.
If you like the idea of cauliflower wings but find actual breaded cauliflower to be underwhelming, I really encourage you to give these a try. The way they've executed these is really special!
I found them totally addictive and want to keep them in the house at all times for quick lunches and snacks.
The breading was flavorful and crunchy, and these are screaming to be dipped into a creamy sauce. See the serving ideas below for sauce suggestions and other ideas for how to use these vegan wings!
That said, Dave -- a known cauliflower hater -- was not a fan of these at all. He didn't care for the texture but did say he liked the breading. Honestly, I was shocked!
How to prepare them
The package comes with oven directions (425° F for 15 minutes, flipping halfway through cooking). But, obviously, I made these in my air fryer, because that's how I roll.
In my air fryer, these turn out great cooked for 10-12 minutes at 400° F.
Definitely serve these hot! If you have leftovers, you can reheat them in the oven at 350° F for about 10 minutes or in the air fryer at 350° F for seven minutes or so.
Do not reheat them in the microwave, because the breading won't be nice and crispy, and this buffalo cauliflower is all about the texture!
Serving suggestions
I love Good & Gather Buffalo Cauliflower as an appetizer or a snack dipped in a quick vegan ranch dressing or curry mayo dip, but you can also get creative with them!
- They make a good filling for cauliflower tacos.
- Serve them over salad greens with ranch or tahini sauce for an easy salad.
- Stuff them into a sandwich or wrap for a bit of crunch.
Anywhere crispy cauliflower with a kick would work, these buffalo wings would be a nice addition!

What are they made from?
Because these have such a unique texture, you may be wondering about the ingredients. According to Target's website, these contain:
Cauliflower, Filtered Water, Enriched Wheat Flour (Wheat Flour, Niacin, Reduced Iron, Thiamine Mononitrate, Riboflavin, Folic Acid), Expeller Pressed Sunflower Oil And/Or Canola Oil, Cooked Brown Rice (Water, Long Grain Brown Rice), Pea Protein Isolate, Corn Starch, Tapioca Starch, Methylcellulose, Salt, Sugar, Yeast Extract, Spices, Onion Powder, Sea Salt, Organic Cane Sugar, Citric Acid, Rice Flour, Garlic Powder, Extractives Of Paprika (Color), Natural Flavor, Yeast, Sodium Bicarbonate, Xanthan Gum.
A serving of four wings contains:
- 170 calories
- 8 grams of fat
- 20% of your daily sodium
- 7% of your daily fiber
- 35% of your daily iron
They're definitely high in salt, but otherwise not bad as far as late-night snacks go!
