Iced coffee lemonade might sound weird, but it's actually super refreshing! This decadent cocktail is a boozy spin on that idea.
If you're curious about iced coffee lemonade, Food52 has a great piece on how it got its start and how to make your own. It's called a Laura Palmer, and it's surprisingly refreshing.
Instead of fancy brewed coffee, this hard iced coffee lemonade gets its bitterness (and some of its sweetness) from Kahlua mixed with tangy fresh lemon juice. There's a little bit of agave nectar to balance out the sweetness, and I added a splash of rum, because why not?

The result is a rich, tangy, sweet cocktail that's a refreshing warm-weather treat.
You can mix up your ingredients in a cocktail shaker, if you like, but I prefer using a mason jar with a tight-fitting lid. Pretty much everyone has a mason jar in their pantry, and the lid means no worries about leaks as you shake, shake, shake.

Hard Iced Coffee Lemonade
- 1 ½ lemons - juiced
- 1 tablespoon agave nectar
- 2 ounces light rum
- 1 ounce Kahlua - or your favorite, vegan coffee liqueur
- plenty of ice
- In a cocktail shaker or mason jar, combine the lemon juice, agave, rum, and Kahlua. Cover, and shake vigorously for 20 seconds.
- Strain into two rocks glass full of, ice garnish with lemon, and serve.
