We tried Just Egg Inspired by America Sous Vide Egg Bites. Here's what these vegan sous vide egg bites tasted like, plus how to cook them.

This is our second review of Just Egg's Sous Vide Egg Bites. Back in July, Dave and I tried their Inspired by Mexico variety. Unfortunately, those contain paprika, which Dave has a severe sensitivity to, so we wanted to try a paprika-free flavor. The Inspired by America ones fit the bill.
The price
Unfortunately, at around $9 for a four-pack, these are a special occasion breakfast. You really need two of these to make a filling breakfast entree. You might be able to do one if you pair it with grits and toast, like Dave does.
The taste and texture
The Inspired by America sous vide bites feature roasted potato pieces, red bell pepper, and dill. It's a really interesting flavor combination that Dave and I both liked a lot!
The dill was definitely surprising, but it was a pleasant surprise. It worked very well with the eggy Just Egg and with the potatoes and bell peppers. I'm not always wild about bell peppers, but they worked very well in this.
Texture-wise, these are a slam dunk for us. They are moist and tender, which works great with the starchy potato pieces. Just a real delight!
Neither of us has had chicken egg sous vide bites, so we can't speak to whether the taste and texture is like the animal version. We can only talk about whether the flavor and texture worked for us.
Overall Just Egg Sous Vide Bites review
Dave and I both gave Just Egg Inspired by America Sous Vide Bites high ratings: a nine and an eight out of 10, respectively. If it weren't for the price point, these would be a staple in our house for sure!
There is a third flavor -- Inspired by Japan -- that we are going to try ASAP, as long as it's paprika free. The odds are good, but you never know. Paprika is in so many foods!

How to cook them
You don't boil Just Egg Sous Vide Bites. The company does the boil part for you. Really, you're just warming these back up, which you do in the microwave.
One of Dave's and my favorite features of these bites is that they cook in under two minutes. Such a nice, quick breakfast!
You can actually make these in the toaster, oven, microwave, or air fryer. Remove the Just Egg Sous Vide Bites from the plastic wrapping, then follow the cooking directions:
- in the toaster: Line your toaster tray with foil and toast it from frozen, uncovered, for 17-20 minutes. Let it sit for 3-5 minutes before serving.
- in the oven: Bake from frozen, uncovered, for 22 to 24 minutes at 400° F. Cool for 3 to 5 minutes.
- in the microwave (our favorite and the fastest method): Cook on high, uncovered, on a microwave-safe plate for 1:45. Cool for 2 to 3 minutes.
- in the air fryer: Air fry at 400° F for 10 minutes.
What is sous vide?
Sous vide is a cooking method where you boil food in a vacuum-sealed bag. You may even have heard it called "boil in a bag".
Sous vide egg bites are hot right now. You can find them at coffee shops and restaurants all over the place. So it's exciting that Just Egg made a vegan version!
