Just because you’re planning to cook supper for Valentine’s Day doesn’t mean you have to do a ton of work. This vegan Valentine’s Day menu is easy to make, so you can focus on rrrromance!
Vegan Valentine’s Day Recipes
I am a big fan of make-ahead and multi-purpose recipes for any holiday meal, and my vegan Valentine’s Day menu is no exception. From the starter to dessert, you can prep everything for this meal in advance and cook it all at once, so there’s no guesswork day-of.
Valentine’s Day Cocktail: Pomegranate Shandy
If you do cocktails, my Pomegranate Shandy is Valentine’s Day perfection. It’s vibrant, sweet, and boozy, and one recipe makes two servings!
I guess you can’t really prep this in advance, but it’s such a simple drink to make, there’s no need to. Just divide a few ingredients between your glasses, and add a straw.
Starter: Kale Caesar
Kick off the meal with my Kale Caesar Salad. This recipe is a bit involved, but you can pretty much make the whole thing in advance, so there’s nothing to do day-of!
The only recommendation I’d make is to leave the almond “croutons” out of the salad until just before serving.
Main Dish: Creamy Balsamic Tofu
Creamy Balsamic Tofu with Cherry Tomatoes is a one-pan entree that’s super simple to make.
Press and marinate the tofu and make the sauce the night before. Day-of, you’ll be ready to bake it up with the tomatoes and make the pasta.
Dessert: MEGA COOKIE
Finish off your meal with a giant Air Fryer Chocolate Chip Cookie. Mix the dough for this mega-chocolatey, gooey cookie the night before, and pull it out of the fridge about an hour before you’ll be ready to bake. You want the dough at room temperature for the best results.
This super chocolatey, cakey MEGACOOKIE takes just 10 minutes to bake and 10 minutes to cool.
The Game Plan: Make this Menu Work for YOU
With a cocktail and three courses to make, you’re going to want a game plan, so everything’s ready at the same time. I made some notes above about how to achieve this, but I wanted to also include a step-by-step for you.
The Night Before
- Make the Kale Caesar Salad, including the dressing and the almond “croutons”. Don’t assemble the individual salads, just make the main salad and all of the mix-ins.
- Marinate the tofu in the balsamic marinade, so it will be ready to bake tomorrow.
- Make the Creamy Basil-Balsamic Sauce from the tofu recipe.
- Mix up the cookie dough. You can even press the cookie to shape, then store it in an airtight container.
On Valentine’s Day
- 90 minutes before supper, pull the Basil-Balsamic Cream Sauce out of the fridge, so it has some time to lose its chill before you use it.
- One hour before supper, finish making the Balsamic Tofu, and get it into the oven. You’ll also pull the cookie dough out of the fridge now to thaw.
- While the tofu bakes, get the pasta cooking and assemble the Kale Caesar Salads on the table.
- Once the salads are out, fix yourself and your partner a couple of Pomegranate Shandies. You earned it for all of the great planning you did!
- When the tofu is ready, enjoy your meal!
- After supper, pop that cookie into the air fryer, then fix yourselves another shandy to sip until it’s dessert time.
