Add all of the bean filling ingredients to your food processor, and run it on high until you have a nice, creamy mix.
Assemble and cook the taquitos
Add about 2 tablespoons of the bean filling in a line down the middle of one of your tortillas. Roll it up into a tight tube, and place it seam-side-down into your air fryer basket or onto a lined baking sheet (if baking). Repeat with the remaining tortillas, then press them gently with your hands and spray them with oil, using a manual spritzer, not an aerosol sprayer.
To air fry: Cook at 400° F for 5-7 minutes. You'll likely need to air fry your taquitos in two batches -- you don't want them to overlap.
To bake: Bake for 15-20 minutes, until the tops are golden brown.

When you're rolling your taquitos, the filling may want to squish out of the ends. That is totally normal! Just shove any escaped filling right back in. It's also so important that you roll these tightly and press them down gently. Otherwise, they can unfurl as they cook.It is so important that you use a manual spray bottle, not an aerosol, for spray oil in the air fryer. That very thin coating you get from an aerosol sprayer can damage your air fryer basket over time. Take it from me, who ruined two air fryers before figuring out what was happening.Leftovers will keep for up to 4 days in the refrigerator in an airtight container.
