In a shallow bowl, toss together the panko, salt, and spices. Pour the aquafaba into another shallow bowl.
Dredge the avocado slices in the aquafaba and then in the panko, getting a nice, even coating. Pat the panko into the avocado slices for the crunchiest results.
To air fry: Arrange the slices in a single layer in your air fryer basket. The single layer is important. No overlapping, please! Air fry for 10 minutes at 400° F, shaking gently after 5 minutes. They are ready when they turn golden brown.
To bake: Preheat the oven to 400° F. Arrange the slices in a single layer on a greased baking sheet. No overlapping, please! Bake for 20-23 minutes, no need to flip. They are ready when they turn golden brown.
Serve immediately with your favorite dipping sauce!

Aquafaba is a vegan egg replacer. It isn't anything fancy -- just the liquid from any can of beans. To collect it, just stick a bowl under the colander when you drain a can of beans. You can freeze any extra in an ice cube tray to thaw as needed.Serve these as finger food with spicy mayo for dipping or stuff them into sandwiches, tacos, or burritos!If you're air frying: You want your avocado fries to be lightly browned and crunchy. When you do that shake after 5 minutes, take a look at the progress. They should be beginning to brown, and when you shake, the panko shouldn't fall off.
