Roasted sweet potatoes
Sweet, tender, lightly-crisp roasted sweet potato cubes are such a versatile side dish or addition to salads, burritos, and tacos!

Ingredients

sweet potato
chopped into ½" pieces, about 2 cups

tablespoon
extra virgin olive oil
¼
teaspoon
salt
Instructions
Preheat the oven to 425° F. Line a baking sheet with parchment paper.
In a large bowl, toss together the sweet potato with 1 tablespoon of the olive oil and ¼ teaspoon of salt. Transfer to your baking lined sheet.
Bake for 30-35 minutes.

You can peel your sweet potato or not -- whatever you prefer!
Make sure that your sweet potato pieces are uniform in size, so they cook evenly.
