🧅🫑 Vegan Fajita Bowls
Ingredients
For the Fajita Seasoning
- 2 tablespoons olive oil
- 1 tablespoon apple cider vinegar
- 1 tablespoon water
- 1 tablespoon chili powder
- 2 teaspoons cornstarch or potato starch
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon salt
For the Fajitas
- 1 block extra firm tofu pressed and torn into bite-sized pieces
- 1 cup sliced sweet onion
- 1 ½ cup sliced green pepper
- 1 tablespoon olive oil
For the Vegan Fajita Bowls
- 3 ½ cups cooked white rice see notes for stovetop and Instant Pot directions
- vegan sour cream
- avocado or guacamole
- diced tomato or salsa
- vegan cheddar shreds
- shredded lettuce
Instructions
Make the tofu fajitas.
- Preheat the oven to 400°F. In a small bowl, whisk together the fajita seasoning ingredients.
- In an 8x8" glass pan, gently toss the tofu together with the tofu fajita marinade that you just made. Make sure you get all of the pieces well coated. Set the tofu aside to marinate for at least 10 minutes.
- Slice the onion and green pepper into strips. Add them to the glass pan with the tofu and the remaining tablespoon of olive oil. Toss to coat. Bake for 40 to 50 minutes, stirring every 10 minutes, to make sure things cook evenly.
Assemble the vegan fajita bowls.
- When the tofu fajita filling is done baking, divide your rice between your bowls. Top with the tofu mixture and fajita toppings of choice. Serve hot!
Notes
Leftovers will keep for 3 to 4 days in the fridge. Store everything separately, and warm the filling and the tortillas in the microwave or in the oven before serving.
To make the rice on the stovetop: Rinse your rice, then add it to a saucepan with 1 ¼ cups water. Bring to a boil, stir well, then reduce the heat and cover the pan. Simmer for 12 to 15 minutes, until the rice has absorbed all of the liquid. Let the rice steam in the pan for 5 to 10 minutes after cooking. Fluff and use.
To make the rice in the Instant Pot: Rinse your rice, then add it to the Instant Pot with 1 ¼ cups water. Cook at high pressure for 5 minutes with a 10-minute natural release. Fluff and use.
