This vegan fajita bowl recipe is adapted from my popular baked tofu fajitas. The tofu and veggies bake in a super flavorful fajita marinade. While they're in the oven, you have plenty of time to make the rice and prep your toppings of choice.

I'm serving my vegan fajitas over rice, but you can serve them over quinoa, salad greens, or your cooked whole grain of choice. Use what you have to make this meal your own!
You can also mix and match the toppings. I love this with some chopped tomato, sliced avocado, vegan sour cream, and vegan cheddar shreds. But raid your fridge and pantry for toppings to make this even more budget-friendly!
If you don't like using store-bought cheeses, my nutritional yeast cheese sauce or nut-free vegan queso are both great drizzled over this bowl.

✓ Ingredients and Substitutions
- olive oil - Adds moisture and helps the tofu and veggies get those nice, browned edges in the oven.
- apple cider vinegar - Adds tang to the marinade.
- dried spices - We are seasoning the tofu with chili powder, garlic powder, paprika and salt.
- cornstarch - Helps the seasonings stick to the tofu. You can use potato starch, if you prefer.
- tofu - This is your protein. I like to tear it to give it a more chicken-like texture, but you can cube it, if you like.
- veggies - We are using standard fajita veggies: pepper and onions. For topping, you can use veggies like avocado, tomato, lettuce, cilantro, green onion, etc.
- rice - This is the base for your vegan fajita bowls. You can use other grains or choice or salad greens, if you prefer.
- toppings - Choose your favorite vegan fajita toppings, like vegan sour cream, vegan cheddar shreds, veggies salsa, guacamole, etc.
🔪 How to Make Vegan Fajita Bowls
Preheat the oven to 400°F. In a small bowl, whisk together the fajita seasoning ingredients.
In an 8x8" glass pan, gently toss the tofu together with the tofu fajita marinade that you just made. Make sure you get all of the pieces well coated. Set the tofu aside to marinate for at least 10 minutes.


Slice the onion and green pepper into strips. Add them to the glass pan with the tofu and the remaining tablespoon of olive oil. Toss to coat.


Bake for 40 to 50 minutes, stirring every 10 minutes, to make sure things cook evenly. When the tofu fajita filling is done baking, divide your rice between your bowls.


Top with the tofu mixture and fajita toppings of choice. Serve hot!

💡 Helpful Tips
- Slice the green pepper and onions into similar-sized strips, so they'll cook evenly.
- While the tofu and fajita veggies bake in the oven, make your rice and prep your toppings, so everything is ready at the same time.
- I really don't recommend omitting the oil. You can reduce it some, but it gives the flavor more depth and helps the tofu and veggies brown on the edges.

Leftovers will keep for three to four days in the fridge. Store everything separately, and warm the filling and the tortillas in the microwave or in the oven before serving.
