You don’t need a milk, butter, or cream to create a rich, decadent soup. This dairy free cream of broccoli soup gets its richness from white beans and cashews. That means it’s got a healthy dose of protein and fiber hidden in every bowl. One meal-sized serving contains 29 grams of protein and 16g of fiber. Boom! Pow!
This dairy free cream of broccoli soup recipe is actually a special request from a long-time friend and coworker, Jeff, for his grandson, Riley. Jeff is actually the person who hired me for my very first writing gig, back in 2008. We’ve never met in person, but we’ve worked together closely for years. Jeff is a great guy and a fantastic granddad. I’m so jazzed that he asked me to create a recipe for his family!
I’m sure you’ve noticed that I’ve been shooting recipe videos lately, and this recipe is no exception. In fact, in this case, the video is kind of the point. I’ve noticed that my three-year-old, Darrol, is much more likely to try a dish if he can “watch a mommy video” of me making it. Even more than if we actually cook together. I mentioned this on Facebook, and that’s when Jeff requested a broccoli recipe for Riley. This one’s for you, buddy.

Dairy Free Cream of Broccoli Soup
Yield: 2 servings as a main dish, 4 servings as an appetizer
- 1/4 cup raw cashews, soaked for 10 minutes in hot water, then drained
- 1/2 teaspoon onion powder
- 1 15 ounce can white beans, drained (Save that precious, precious aquafaba!)
- 1 clove garlic, chopped
- 2 cups steamed broccoli (from fresh or frozen is fine)
- 2 cups veggie broth (I used 1 Not Chick’n Broth cube dissolved in 2 cups hot water.)
- 2 tablespoons nutritional yeast
- juice of 1 fresh lemon
- salt and pepper, to taste
- extra steamed broccoli, for garnish
- In your blender, combine everything but the salt and pepper and the extra broccoli.
- Puree until smooth, then season with salt and pepper, to taste.
- If you used a high speed blender, your soup should be nice and warm already. The magic of the Vitamix! If you want it really hot, though, go to step 4.
- If you used a regular blender, transfer the soup to a small saucepan to warm it up before serving.
