This is a 1-bowl salad that's quick and easy to make, and you can serve it so many different ways! Scoop it up with crackers or flatbread. Spoon it over a bed of hummus or greens for an easy dinner. Or stuff it into a wrap!

In a small jar with a tight-fitting lid, add all of the chipotle lime dressing ingredients. Shake well to combine.


In a salad bowl, add all of the white bean salad ingredients. Pour the dressing over the salad in the bowl, and toss to coat everything really well.

Avocado white bean salad is best if you can eat it in the first day or two, but it will keep for three to four days in the fridge. The lime helps prevent the avocado from browning, but the salt in the dressing will soften the avocado and other veggies as it sits. It will still taste good, it will just have a softer texture.

Ingredients
For the Salad
- 15 ounce can white beans any kind you want, drained and rinsed. Or 1 ½ cups cooked white beans or chickpeas
- 1 Haas avocado peeled, pitted, and chopped into ½" piece
- ½ cup chopped cucumber peeling is optional. You can use up to 1 cup, if you want more crunch!
- ½ cup chopped tomato Roma or cherry tomato are both great options! You can use up to 1 cup, if you have a lot of tomato that needs using.
- ¼ cup chopped green onion
- ¼ cup chopped cilantro
- ½ to 1 hot green chili minced, optional
For the Chipotle Lime Dressing
- ¼ cup olive oil
- ¼ cup lime juice You can also use 1 teaspoon lime zest for more flavor, optional.
- 1 teaspoon agave nectar
- 1 teaspoon garlic powder
- ⅛ teaspoon cumin
- ¼ to ½ teaspoon chipotle chili powder
- ⅛ teaspoon salt
- ⅛ teaspoon black pepper
Instructions
